Rhubarb & Dried Cranberry Chutney

rhubarb11 cup medium diced rhubarb

1/2 cup small diced onion

1/4 cup chopped dried cranberries

1/4 cup cider vinegar

1 tsp honey

1/2 tsp grated lemon zest

1/4 tsp kosher salt

Method

1. Combine ingredients in a saucepan over medium heat.

2. Simmer for 5-6 minutes or until it thickens.

3. Let cool.
